WIAW #11 some veggies edition

ugh...once again I didn't get a ton of vegetables in....I did however check out a couple of vegetarian cookbooks from the library this week so perhaps I will be able to increase my veggie intake soon.

Without further delay let's get to the:

Unfortunately, I don't have time so here's a short version.

Breakfast: peaches and cream oatmeal and a blueberry yogurt
 Lunch: Mexican chicken tortilla soup, cuties and sun chips
Dinner: stuffing, cottage cheese, VEGGIES (broccoli, carrots, cauliflower) & MORE VEGGIES - salad with spinach, yellow peppers, orange peppers, cheese and western dressing.
Dessert: cookie dough ice cream [with all the fat ;) ]

  1. i think veg cookbooks are a great way to sneak in veggies! and that ice cream looks fantastic. :)

      Yeah I still haven't looked at the cookbooks! o.0 I need to do it soon, before they are due. Hopefully I'll find some good ideas.
